I have recently been trying out new recipes and I wanted somewhere to keep log of what I've been cooking via photos (iPhone- keeping it simple). I don’t know if this picture really captures the tastiness of the food but this salad might be the best one I’ve made yet. Arugula, steamed broccoli and carrots, tomatoes, avocado, goat cheese, home made pesto, and a dash of balsamic vinegar. Yum!!
Fresh pesto! So easy to make! Basil, pine nuts, olive oil, and parmesan cheese. Yum. So much cheaper than buying store made pesto.
Haven’t been cooking too much lately. Work has kept me busy and it’s hard to get yourself to cook a meal when you’re tired! Here’s a sandwich I made for lunch. Two fries eggs, salad tomatoes sliced, baby mixed greens, avocado, bell pepper, this mexican pepper, mozzarella cheese, and avocado spread all on some tasty grain bread. :)
i successfully made croissants!!!! SO PUMPED. they weren’t PERFECT but they are tasty. i know exactly what will make them perfect for my 3rd time. I think i rolled them up too much and so they were a little on the thick side. Croissants aren’t that hard to make..hehe just there is a lot of attention to detail with them and it takes three days.
Pastry school here i come! im so ready, ill be starting in June. really excited for that. Ill be learning how to make wedding cakes, candies, artisan breads, and lots of other desserts and how to plate them all fancy.
Made a Thai coconut soup this evening! Super tasty.
Coconut milk
Veg broth
Red curry paste
Garlic
Onions
Broccoli

Zucchini
Jalapenos
Green chili
Cilantro
Would have put tofu in it if I had any and bamboo shoots would have been tasty as well!
I served it with rice as well.
So croissants are hard to make..they looked tasty! And the outside layers were perfect and flaky. Buuuut the inside was thick and doughy..2 things I did wrong, they weren’t cold enough before I started baking them so the butter melted and fried the bottoms and 2nd I don’t think I rolled the dough out thin enough! But both of those problems are easily fixed for the next time around. At least they looked nice.
First Thai recipe done. I made a peanut sauce and then just did your standard frying of tofu. The sauce turned out okay. Not sure what flavors were missing though. It kind of just tasted like peanut butter..there was a green chili and garlic in it then I added cilantro. You put it in a skillet with peanut oil and let it all simmer. I’ll try it again later I suppose.
I have croissants rising in my kitchen right now! About to put them in the oven. Super excited.
Made more salsa!
2 1/2 tomatoes
1/2 white onion
4 jalapeños (look at those seeds!)
2 cloves of garlic
2 limes worth of juice
And a bundle of cilantro
I think it needs more tomatoes.. It’s still tasty. Pretty much tastes like blended pico de gallo.
I’ll be cooking again finally. Last week I was trying to clean out my fridge so I was just eating the same thing all day every day. So this week! I’m making Thai themed food. I’m excited!!!
Just made a simple stir fry tonight. Fried the tofu lightly in olive oil then added french green beans, bell pepper, onion and topped it off with fresh jalapeno’s. The sauce was a combination of all of those! A sweet chile sauce, sriracha, teriyaki (veri veri teriyaki is my absolute favorite!), and dumpling sauce- all mixed into the pan with the veggies and tofu. It was a good combo. I am SUCH a food mixer therefore i love adding lots of different flavors together. For those that have a Whole Foods by them and can go to their hot food buffet areas..i always fill up a box and just mix all the food together. so weird. haha
Made a breakfast sandwich this morning! Haven’t been cooking too much lately, trying to work my way through leftovers and produce. This sandwich was pretty tasty! Buttered the pan and put the bread in for a while, then spread guacamole and goat cheese on it. Then just eggs cooked kind of like an omlette, I ended up splitting it into pieces. Sun dried tomatoes, onion, and bell peppers. I hardly ever can get myself up with enough time to make breakfast, usually just have lunch and dinner.
